Holy Moly and all things San-J

I recently discovered Naturally Savvy and began following them on Twitter and Facebook. They posed a #QOTD (question of the day) asking if anyone eats gluten free and what was their favorite product they had discovered. I responded that Udi's Gluten Free Lemon Streusel Muffins were my favorite and a few days later I received a reply telling me I had won something from San-J. I assumed I would get a bottle of GF Soy Sauce.

I cannot wait to COOK some of the yummy gluten free recipes I found on San J's Website.

Peanut Butter Balls

I got a recipe from Udi's Facebook page for Peanut Butter Balls. I made them Saturday night for my wife and I, and a house guest. We can't keep our fingers out of them!! The first picture is from the pre-chocolate coating. I think next time I may use dark chocolate rather than milk chocolate. Thanks, Udi's!!

Udi's Gluten Free Lemon Streusel Muffins

Holy Guacamole! You may hear me say that often. These gluten free muffins are oh.my.goodness.GOOD! I had a $1.00 off coupon from Udi's that I redeemed at Whole Foods this weekend for these. I couldn't wait to get up Sunday morning and heat my lemon streusel muffin in the microwave. I split it in half and sprayed a little butter in the middle. This muffin is SO light and fluffy! It was very moist and the flavor is PERFECT. Not too much lemon that it makes you pucker, but not faint enough that you're asking yourself, "is this lemon?" I will defiantly be keeping these in my freezer from now on. Lucky for me, they were on sale at Whole Foods this weekend!

Gluten Free Sauce

Look what I put on my Trader Joe's gluten free pasta tonight...


The Classico Light Creamy Alfredo label specifically says "GLUTEN FREE". I boil my noodles until tender, drain, then add 1/3 cup of sauce until warm. Sprinkle some garlic powder and parmesan cheese on top. Makes a great meal!!
